ingredients:
8 thin pork chops, boneless
3 tablespoons fresh lemon juice
1 tablespoon fresh thyme or 1 teaspoon dried thyme
2 teaspoons lemon zest
2 cloves of garlic, crushed
1 tablespoon flour
2 teaspoons olive oil
¾ cup skim milk
salt
pepper
preparation:
Mix 2 tablespoons of lemon juice with thyme, lemon zest and garlic in a small bowl . Rub chops on both sides with this preparation. Place in a glass dish . Cover and refrigerate for 3 to 4 hours.
Remove from the refrigerator and sprinkle each cutlet with flour, salt and pepper.
Heat oil in a pan. Fry the chops ( split ) in hot oil on both sides until golden brown. Once they are all golden return them to the pan. Add milk and cook until pork is cooked through and the sauce has thickened slightly. Pass the chops to a serving platter .
Add, whisking , 1 tablespoon of lemon juice to the sauce pan and move for about 30 seconds. Season with salt and pepper.
Pour sauce over chops and serve.
